Roasted garlic is as close to the condiment from heaven as you are going to get. Toasted and creamy with a mild garlic flavor. It takes an hour in to oven to produce it BUT if you use your grill, it’s faster and even better.
Take a head of garlic and cut the butt end off (where the roots came out). Then put it in a basket for grilling and drizzle a little canola oil on the cut end. Place it on the upper rack of your grill and proceed with your cook as usual. Your garlic will be ready to eat by the time you finish everything else. You will know it’s done when the end is sort of toasty and the interior of the cloves has come out of the exterior and all the cloves have started to emerge from the papery shell.
Just take a pointed knife and dig out the garlic goodness. Soft and lovely, some people like to spread it on bread as a fine topping but I just pop each clove in my mouth and savour the flavor. Mmmmm. This is a treat you can have every day and never get tired of it.
